They’ve crafted a limited-edition Bolognese pizza, available only at their Middle Street restaurant this February. It’s called the JP McMahon x The Dough Bros Bolognese Pizza.
This unique pizza features classic Bolognese sauce made with slow-cooked fennel sausage. It also includes smoked Gubbeen cheese béchamel, wild ramsons, and Irish rapeseed oil.
JP McMahon recalls his first Bolognese experience in the 1980s. He says it sparked his culinary journey. He loves collaborating with The Dough Bros, calling them one of Ireland’s best pizza makers.
Ronan Greaney, co-owner of The Dough Bros, shares his excitement about this collaboration. He mentions they’ve worked with JP before, but this is their first pizza together.
